Tandoori Chicken

1kg Chicken (thighs)

500g Baby Potatoes

1 Large Red Onion

2 tbsp Oil
-
100ml Water​​ (adjust to your preferred consistency)

Cooking Methods
​​​Step 1
Wash the potatoes and cut the onion into thick slices.​

Step 2
In a bowl, ​combine tandoori masala spice mix, 100g water, and 2 tbsp oil. Mix until you make a paste (adjust the water to your desired consistency).

Step 3
Take a large, deep baking tray and add the 1kg chicken thighs, 500g potatoes, and sliced onions. Pour in the tandoori paste and mix well until everything is evenly coated, saving a small amount of the paste for later.​

Step 4
Cover the baking tray tightly with foil, ensuring it is well-sealed to trap the steam, which will help cook the meat thoroughly.​

Step 5
Place the tray in a preheated oven at 200°C and bake for 20 minutes. Then, remove the foil, brush the remaining tandoori paste over the chicken and potatoes, and return it to the oven for another 20 minutes until cooked through and slightly charred.

Step 6
Remove the tray from the oven and garnish with freshly chopped coriander leaves. Serve warm with Riya’s naan, paratha, roti, or chapatti for a delicious meal. Enjoy!
