For a tasty twist, add a filling of mixed vegetables, egg, cheese, and mixed herbs. This flavourful combination makes for a satisfying and nutritious breakfast.

Ingredients

4 Servings

  • 4 pieces Riya’s Plain Paratha ( also available in wholemeal )

  • 4 Eggs ( 1 egg per paratha )

  • 250g Cheese

  • 1 large Tomato

  • Bunch of Coriander leaves

  • 1 Large Onion

  • 1 Green Chilli

  • Salt & Pepper ( adjust to your taste )

  • 2 tsp Mixed Herbs ( 1/2 tbsp per mixture )

Cooking Methods

Step 1

Cut the vegetables into small pieces and mix in a bowl ( you can add any vegetables based on your preference ).

Step 2

Crack an egg into a bowl (1 egg per paratha) and whisk it well. Add 2 tbsp of mixed vegetables, 1 tbsp of cheese, ½ tsp of chopped green chilli, ½ tsp of mixed herbs, and a pinch of salt and pepper. Mix everything together until well combined.

Step 3

Heat a pan and cook the paratha for 1 minute on each side. Then, pour the egg mixture on top, spreading it evenly.

Step 4

Once the mixture has started to set, flip the paratha to cook the egg mixture thoroughly on the other side.

Step 5

Once the mixture is fully cooked, add cheese and fresh coriander in the center. Fold the paratha in half and serve while still warm for the best taste!
